What type clear coat will not yellow?

I am painting a cocktail table top a cream color. The paint I have now is a latex paint. I put a poly sealer on the top to make it more durable, because I read online that poly typically doesn't turn yellow. Well...within a week, my top was completely yellow. I even used the type of poly that someone on here said would NOT yellow. So my question is...what is the best way to get a durable table top in the color I want? What is the best sealer that will not yellow & not be sticky?
